There are over 100 pineapple varieties world-wide (Smooth, Cayenne, Queen and Red Spanish, among others). The fruit is first peeled and sliced by machine, then the core is removed. The pineapple slices are then placed on wire-strung wooden racks and moved through a tunnel where are dried by flowing warm air. The sweetened product is dipped in a sugar solution before drying.

Pineapple contains the proteolytic enzyme bromelain, which stimulates digestion and is good for the entire body. Additionally, pineapple is rich in potassium, calcium, iron and folic acid.

Uses:

Dried pineapple pieces are a healthy snack for in-between meals and a delicious addition to breakfast cereals, like granola. It can be used in baking and desserts. Pineapple pieces are particularly tasty in fruit salad.
